Roasted salmon with mustard, lemon & dill

Ingredients:

  • 1 Large salmon filet, about 1 lb., 1 inch thick.

  • 3 Tablespoons grainy mustard 

  • 1 Tablespoon butter

  • 1 Lemon, halved 

  • 2 Heaping tablespoons fresh dill 

  • 1 Tablespoon olive oil

  • Sea salt & pepper 

Directions:

  • Preheat your oven to 400 degrees. 

  • Line a baking sheet lined with parchment paper, then smear with a small amount of olive oil.

  • Put the salmon filet, all one piece, on the sheet skin side down. 

  • Spoon the mustard on top of the salmon and spread into an even layer, including the sides. 

  • Top with 1 tablespoon dill, a sprinkle of salt & pepper and 1 heaping tablespoon of unsalted butter.

  • Put the lemon halves face down next to the salmon on the baking sheet. 

  • Bake the salmon for about 20 minutes, until just done.

  • When done, turn over the lemons and squeeze the juice over the salmon.

  • Garnish with the remaining dill, and serve.
