Cold peanut + chicken noodle salad

Ingredients:

For salad:

  • 1 Cup shredded chicken

  • 10 oz Soba noodles

  • 3 Large radishes, julienned 

  • 1 Handful sugar snap peas, julienned 

  • 2 Scallions, roughly chopped

  • 1/2 Cucumber, seeded & julienned 

  • Handful of cilantro, roughly chopped

  • Handful of mint, roughly chopped

  • 1/2 Cup roasted salted peanuts 

  • 1 Lime

  • 1/2 Tablespoon sesame seeds

For peanut dressing:

  • 1/2 Cup smooth peanut butter

  • 1/4 Cup soy sauce 

  • 2 Tablespoons honey   

  • 2 Tablespoons lime juice

  • 2 Teaspoons chili oil

  • 1 Garlic clove, grated

  • 1/2 Tablespoon grated fresh ginger 

  • 1 Teaspoon sesame oil

Directions:

  • Cook the soba noodles according to package instructions, then rinse under cold water. 

  • Put the shredded chicken in a bowl. Add the chilled soba noodles, julienned veggies, scallions, herbs, peanuts, and toss to combine.

  • Mix together all the sauce ingredients and add to the chicken. Toss until combined and serve with a squeeze of fresh lime  and a sprinkling of sesame seeds
