Juniper honey

Ingredients:

  • 1 Jar good quality honey (I prefer dark honey for this recipe)

  • 1/4 Cup dried juniper berries

Directions:

  • Pour the honey in a glass heatproof bowl and place it over a pot of water.

  • Pour the juniper berries into the honey.

  • Bring the water to a very low simmer and heat the honey for a minimum of 8-10 hours. If the water level becomes low, refill the pot with water if necessary.

  • It’s very important that the honey doesn’t exceed 105 degrees, otherwise it will start to crystalize. If necessary, use a candy thermometer to maintain a steady temperature of 100 degrees. After 10 hours, the honey will be even darker in color and slightly thicker in consistency.

  • Strain the juniper berries and store the honey in a sterilized glass jar.
